2 zuchinni, peeled *
2 tbsp lemon juice
2 medjool dates, pitted
2 garlic cloves
1/2 tsp onion powder
1 tsp sea salt (optional)
Pinch of black pepper
1/2 tsp each of fresh dill, parsley, and chives
* For an even creamier dressing, replace zucchini with 1-1/4 cup of cashews + add water to thin to desired consistency.
Blend everything together in a high speed blender or food processor, except the fresh herbs. Let it run on high for a bit so it is really creamy and smooth.
Then, add the fresh herbs and pulse to mix them in. This will give you the flavor of the herbs without turning everything green.
