2 cups raw cauliflower, “riced”
1 tbsp fresh lime juice
1 tsp ginger, grated
3 sheets of nori
1/4 avocado cut into strips
1/4 red pepper cut into strips
1/4 yellow pepper cut into strips
1/2 medium cucumber cut into strips
1/4 cup Coconut Aminos Garlic Sauce
1 tsp lime juice, fresh
1/8 of an avocado (optional)

1. Combine the riced cauliflower, ginger and lime juice in a bowl. Place one nori sheet with the shiny side down on a sushi roller mat. Add a third of the mixture to the nori sheet (there is enough for 3 nori rolls) and cover most of it, leaving about one inch at one end so you can roll it up properly without stuff falling out.
2. Then place the avocado, peppers, cucumber and salad greens in the middle. Then roll it up— this can take a bit of practice!
3. To make the dipping sauce add everything into a small ramekin and serve with the sushi. Enjoy!
