1 cup sun-dried tomatoes (soaked in 2 cups filtered water)
3 stalks celery
1-2 cloves of garlic
1/4 tsp cayenne
1 tsp sea salt (optional)
3 cups diced tomatoes
1/2 tsp oregano
Reserve water from sun-dried tomatoes and put in blender with celery, garlic, salt, and spices. Once smooth, add all the tomatoes and blend on low to keep a chunky texture. OR make it a smooth and HOT soup by blending in a high speed blender on high for 3 minutes. It's delicious both ways (we love warm soup on a cleanse!!).
1/2 cup basil leaves chopped
1 zucchini chopped
1/4 cup chopped white onion
1/4 cup oregano leaves chopped
1 tablespoon thyme leaves minced
pinch of pepper or red pepper flakes (optional)
Divide toppings into bowl(s) and top with soup blend. Enjoy!
