2 large mangos, diced into small cubes
1/4 cup golden raisins
1/2 lime, peeled + diced
1 tbsp ginger, minced
1/2 cup red pepper, diced
3/4 teaspoon curry spice
1/4 cup red onion, diced
1 tsp chili flakes (to taste)
Sea salt + white pepper (to taste)
1 tsp maple syrup
RAW : Combine all ingredients in a food processor, except for red onions, cilantro + mango. Pulse until a chunky dip texture is achieved. Stir in mango, cilantro and red onions by hand.
COOKED : Heat a sauté pan with a splash of water + add the onions to sweat until soft. Add the ginger, bell pepper and chili flakes. Saute for 1 to 2 minutes. Finally add the mango and golden raisins to cook for 1 more minute. Turn off heat and stir in cilantro, maple syrup + lime juice. Eat as is or pulse in a blender to desired texture.
