2 cups cherry tomatoes
1/2 cup celery, chopped
1/2 cup red bell pepper, chopped
1/4 cup basil leaves, diced
1/2 lemon peeled + chopped
1 tsp garlic powder
1 tsp onion powder
1 medjool date
Sea salt + black pepper (to taste)
Place tomatoes in a high speed blender and mix. Pulse in the rest of ingredients to desired texture.
• Any tomatoes will do, but cherry tomatoes tend to be sweeter and less watery than large tomatoes.
• For extra sweetness, blend in 1-2 tsp of maple syrup.
• Enjoy served over your favorite veggie noodles!
