2 cups cherry tomatoes (set 1/2 cup aside)
1/2 cup sweet bell peppers (set 1/4 cup aside)
1 large stick of celery approximately 12 inches long (set 3 inch piece aside)
1 medjool date
1 1/2 cups salt free sun dried tomatoes
1/2 tsp cumin
1/2 tsp chili powder
1/2 cup chopped sweet onion
1 cup of cauliflower florets
sea salt to taste
Eat with steamed sweet potatoes, potatoes or steamed cauliflower rice.
Blend together tomatoes, bell pepper, celery, medjool date, sun dried tomatoes, cumin, chili powder and salt until smooth. Add remaining tomatoes, peppers, celery, cauliflower and onion and pulse blend on low until nice and chunky. Don’t over blend or it will come out like paste! You want it thick! Serve cold or gently warmed.
