2 cups soaked cashews
1/4 cup pitted dates
1 1/2 cups chilled filtered water
1/2 cup coconut flakes (or fresh coconut meat)
pinch vanilla bean powder
1 tsp raw honey
For a fat free alternative, replace nuts with 2 frozen bananas.
Blend ingredients on high until smooth and creamy. Top with chopped papaya, wild blueberries, chia seeds, mulberries, cinnamon or any other favorite topping!
